However, for this recipe, you can skip the soaking step altogether. Instead, toss a dried wrapper into a skillet, and like magic, it works perfectly.
How to Make Rice Paper Eggs
Don’t be intimidated by the unfamiliar ingredients; this recipe is actually quite simple. If you can scramble eggs, you can make this dish.
Start by placing a dry rice paper wrapper in a large skillet and adding a spoonful of chili crisp or chili oil. Personally, I recommend chili crisp for its crunchy peanuts and bold chili flakes if you can find it.
The addition of oil prevents the rice paper from rolling up during cooking.
Next, crack an egg onto the rice paper wrapper, breaking the yolk and spreading it evenly. The egg will cook through, thanks to the heat-resistant nature of the wrapper.
Don’t hesitate to add your preferred toppings just as the egg is nearly set. I like to include fresh tomatoes and chives, but you can get creative. The original TikTok version suggested sriracha and mayo as fillings, but I prefer drizzling them on top.
Cook for another minute or two until the eggs are fully set, then fold the wrapper in half, creating a half-circle shape. Transfer it to a cutting board, chop it into thirds, and drizzle with sriracha mayo. Serve immediately!

When it comes to fillings for these rice paper eggs, less is more. Keep the fillings thin but feel free to get creative. I often use leftover bits and pieces from previous meals. Here are a few ideas to get you started:

- Fresh herbs like cilantro, chives, scallions, or parsley.
- Pickled jalapenos for an extra kick.
- Harder cheeses like parmesan would complement the flavors wonderfully.
